  2. Passion: A great chef has a tremendous passion for food and cooking. They enjoy the process of selecting foods, preparing meals, and creating menus.
Hmm, it’s not exactly a childhood dream I have always had a love of cooking from the days when my gran would let me help her out in the kitchen. I was never academic so always wanted to do something with my hands.

INGREDIENTS

  • 1 cup green lentils
  • 2 cup hot water
  • 1  cups off chicken stock ( you can use 2 cubs maggi chicken stock)
  • 2 cups white burgol (large) washed and soaked for ten minutes.
  • 2 tbsp olive oil 
  • 2 medium onions, finely chopped
  • 1/2 cup fresh ginger finely chopped
  • 1 tsp crushed black pepper
  • 2 tsp cinnamon
  • 1 cup dates pilled and chopped
  • 1 cup fresh parsley leaves roughly chopped

INGREDIENTS

  • 1 tbsp vegetable oil
  • 500 gm minced beef
  • 1 medium onion, finely chopped
  • 2 tbsp, tomato paste 
  • 5-6 large Tomatoes, chopped
  • 1 tsp cinnamon powder
  • 1 tsp dried basil,( you can use fresh basil leaves as usual
  • 1 tsp dried oregano
  • 3 cup hot water 
  • 4 cups macaroni pasta
Note - if you know how to make tomato sauce you can add tomato sauce instead off tomato paste

Dried Figs & Walnuts Lamb Tagine

INGREDIENTS

  • 1 kg lamb with bone, cut into small pics 
  • 2 tbsp canola oil or Olive oil
  • 2 big White Onion finely chopped
  • 2 tbsp coriander fresh leaves finely chopped
  • 1 Garlic clove diced 
  • 1 tsp Cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp, Turmeric Powder
  • Pinch of saffron
  • 1 tsp Black pepper Powder
  • 2 Cubes of chicken stock
  • 2 1/2 cups hot water
  • 1 Cup dried figs
  • 1/2 Cup Walnuts
  • 2 tbsp sugar
  • 2 tbsp orange blossom water

Ingredients


  • Basmati Rice- 200 gm ( soak 20 to 30 mint in water)
  • Split Mung - 100 gm ( soak 20 to 30 mint in water)
  • Shrimp( 26- 30 size)- 16 pcs ( Remove skin and tails)
  • Onion - 1 small pcs ( fined chopped)
  • Garlic - 3 Cloves( fined Chopped)
  • Cumin Powder- 1 tsp
  • Turmeric powder 1 tsp
  • Coriander powder 1 tsp
  • Dry lemon powder tsp
  • Dry lemon whole 1 PC
  • Saffron color 1 tsp
  • Coriander leaves chopped
  • hot water, salt to test
